  1. Italian Sunday Suppers 1 Rustic Italian Cooking: Beef

    The Italian kitchen is the heart of the home, a place where simple, fresh ingredients are transformed into satisfying meals and memorable events. In this course (one in a series of five) a complete rustic Italian meal is prepared featuring a beef entree, side dishes, and dessert. The course is led by an instructor born into the Italian cooking tradition who apprenticed at a specialty restaurant in Naples, Italy. Students will assist in preparing braciole (sirloin tip rolled around a filling of pine nuts, garlic, and parsley and then braised and simmered in tomato sauce), gnocchi (potato dumplings), eggplant roll-ups (filled with chopped tomato, fresh herbs, cheese, and salami), and a ricotta and almond tart, followed by the entire meal enjoyed together family style.

  2. Italian Sunday Suppers 5 Rustic Italian Cooking: Holiday

    The Italian kitchen is the heart of the home, a place where simple, fresh ingredients are transformed into satisfying meals and memorable events. In this class (one in a series of five) a complete rustic Italian holiday meal is prepared featuring an entree, side dishes, and dessert. The class is led by an instructor born into the Italian cooking tradition who apprenticed at a specialty restaurant in Naples, Italy. Students will assist in preparing lobster with fresh tomatoes (wine and herbs), salmon (roasted and dressed with wine vinegar, lemon juice, garlic, and herbs), broccoli rabe (sauteed with chilis and garlic), caponata (traditional marinated salad with cauliflower, pickled vegetables, olives, and capers) and struffoli (a dessert of fried dough balls covered with honey and almonds), followed by the entire meal enjoyed together family style.

  3. Rustic Italian Cooking: Antipasti Cooking With Class

    Prepare and enjoy five traditional Italian appetizers: crostini with sauteed artichoke hearts, puffed pastry (filled with wild mushrooms and sausage), onion pie, asparagus with prosciutto and eggs, and stuffed mushrooms (filled with bread crumbs and fresh herbs) in this hands-on class taught by an instructor born into the Italian cooking tradition. Apprenticed in a specialty restaurant in Naples, Italy, she learned to create these Italian favorites using the freshest ingredients available.
