  1. Italian Sauces and Condiments

    Having several versatile sauce and condiment ideas in your cooking repertoire can enhance your pasta dishes, as sides or entrees. Let our "seasoned," culinary instructor, Francesca, come to the rescue with several favorites! You'll learn to make "amatriciana," a tangy tomato based sauce (made with pancetta and onions, served with penne pasta), "carbonara," (artichoke hearts, scrambled egg and parmigiano cheese, served with linguine), prosciutto and peas (in a white cream sauce, served over bow tie pasta), and "salsa ai funghi," a tomato based sauce (made with a mix of wild mushrooms and dried porcinis, served with spaghetti).

  2. Italian Summer Suppers 1 Rustic Italian Cooking: Grilled Lamb

    In this course a complete rustic Italian meal is prepared featuring a grilled lamb entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Students will assist is preparing grilled lamb chops (marinated in red wine, lemon juice and herbs), Neapolitan style potato salad, marinated and grilled artichoke hearts (prepared with a white wine vinaigrette including olives, onions and garlic) and a seasonal fruit dessert, followed by the entire meal enjoyed family style.

  3. Italian Summer Suppers 2 Rustic Italian Cooking: Vegetarian

    In this course a complete rustic Italian meal is prepared featuring a vegetarian entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Students will assist in preparing eggplant parmigiana (sliced and fried eggplant layered with mozzarella and parmigiano cheese and baked in a light tomato basil sauce), zucchini parmigiana (layers of fried zucchini slices baked with homemade bread crumbs, mozzarella and parmigiano cheese and fresh basil), frittata di cipolle (onion frittata made with caramelized onions, eggs and parmigiano cheese, then served on a bed of mixed greens) and a seasonal fruit dessert, followed by the entire meal enjoyed together family style.

    In this course a complete rustic Italian meal is prepared featuring a game hen entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Students will assist in preparing roasted game hen (rubbed with white wine and herbs, then topped with a citrus vinaigrette and fresh tarragon), creamy mushroom polenta, fennel au gratin and a seasonal fruit dessert, followed by the entire meal enjoyed family style.

  5. Rustic Italian Cooking: A Taste of Southern Italy Campania & Sicily

    Travelers to Italy may be surprised at the diversity of its regional cuisine. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from northern Italy. Each night a complete rustic Italian meal featuring an entree, side dish and dessert will be prepared and enjoyed together. Week one includes fresh cod fillets (topped with a fresh parsley and garlic sauce), grilled bell pepper and zucchini salad (tossed with a white wine vinaigrette including basil and oregano), cannellini bean salad (tossed with fresh fennel and herbs and a lemon garlic vinaigrette) and biancomangiare (cream pudding made with almonds and orange zest, served with poached fruit). Week two includes risotto con gamberi (shrimp risotto), swordfish (pan seared and topped with fresh olives and herbs), asparagus and carrot salad (dressed with a white wine vinaigrette) and espresso coffee granita (served with homemade whipped cream and cognac).

    Prepare and enjoy three traditional Italian style salads in this class taught by an instructor born into the Italian cooking tradition. Apprenticed in a specialty restaurant in Naples, Italy, she learned to create these Italian favorites using the freshest ingredients available.

    The menu includes: orzo pasta salad (a dressed summer salad including fresh grape tomatoes, seasonal vegetables, olives and fresh basil); seafood salad (a mix of seafood and shellfish in a lemon vinaigrette, served chilled); panzanella (homemade toasted crouton salad with fresh cucumbers, tomatoes, red onions and a white wine vinaigrette).

    Prepare and enjoy three traditional appetizers in this class taught by an instructor born into the Italian cooking tradition. Apprenticed in a specialty restaurant in Naples, Italy, she learned to create these Italian favorites using the freshest ingredients available.
    The menu includes: two toppings for crostini (one spread made with fresh green olives, almonds, garlic and fresh herbs) and (the second, an artichoke pesto); two versions of bruschetta (one topped with radicchio sauteed in olive oil and garlic, then sprinkled with gorgonzola cheese) and (the second, a traditional Neapolitan style with fresh tomatoes and basil); zucchini fritters (dipped in yeast batter that includes pecorino cheese and chives, then fried until crisp).
